Chef Grey is the Founder and Executive Chef of Shiro Japanese Bistro in San Antonio. Known for his dedication to premium ingredients, refined flavors, and sustainability, he brings decades of experience from some of the most prestigious sushi establishments in the country.

Grey studied Culinary Arts Management and Convention at the University of Nevada, Las Vegas, launching his career at Caesars Palace. He later provided catering services for top hotels, including The Venetian, Bally’s, and Paris Hotel, before refining his craft at Nobu at Hard Rock Hotel and other renowned sushi restaurants in Las Vegas.

He later opened his own restaurants in California, quickly establishing an excellent reputation. Over the years, he has built a reputation for excellence, combining traditional Japanese techniques with modern creativity to craft dishes that are both authentic and innovative.

With Shiro Japanese Bistro, Chef Grey brings his passion and expertise to San Antonio, offering a dining experience that highlights precisely crafted nigiri and thoughtfully curated seasonal dishes.
